Traditional Indonesian Spicy n Sour Soup
 
材料 (3-4人份量):
100克雞脾肉 (切長形)
150克鮮蝦 (留尾)
半個洋蔥
少許蔥(切碎)
3cm小青辣椒
2瓣大蒜(切碎)
1-2粒冬菇(浸泡切片)
1個紅辣椒(斜切)
3湯匙辣鴛鴦蒜蓉辣椒醬
1湯匙豉油
1湯匙砂糖
1茶匙鹽
半茶匙雞湯
半茶匙胡椒粉
2茶匙麻油
2茶匙醋
1隻雞蛋(打散)
1000毫升水
少許生油

芡汁:
2湯匙生粉
3湯匙水
 
做法:
 
1. 熱油爆香生薑, 洋蔥, 大蒜, 加入紅辣椒, 小青辣椒
2. 將鮮蝦, 雞肉, 辣鴛鴦蒜蓉辣椒醬, 豉油, 鹽, 胡椒粉, 砂糖, 雞湯, 麻油, 醋加入煮至沸騰
3. 伴入芡汁, 雞蛋攪拌至均勻
4. 起鍋前放蔥,即成
 
 
 
     
   
Stir-Fried Prawns in Spicy Tomato Sauce
 
材料 (3-4人份量):
500克鮮蝦
4塊沙楠香葉
5厘米生薑(切碎)
2個蕃茄(切片)
3茶匙檸檬汁
半茶匙鹽
200毫升水
5湯匙辣鴛鴦蒜蓉辣椒醬
5粒紅蔥頭(切碎)
3瓣大蒜(切碎)
3茶匙蝦醬
3茶匙紅糖
生油少許
 
做法:
 
1. 用油爆香生薑, 紅蔥頭, 沙楠香葉及大蒜
2. 放入鮮蝦, 蕃茄, 辣鴛鴦蒜蓉辣椒醬及蝦醬翻炒
3. 加入鹽, 紅糖,檸檬汁及水翻炒至均勻, 起鍋即成
 
 
 
     
   
Fried Bream Fillet with Garlic Chili Sauce
 
材料 (3-4人份量):
300克鯛魚肉 (切片)
半隻紅椒(切方片)
半隻青椒(切方片)
1/4茶匙胡椒粉
1個洋蔥(切片)
3厘米生薑(切碎)
2塊乾辣椒(長切)
3湯匙辣鴛鴦蒜蓉辣椒醬
1湯匙蠔油
1湯匙蕃茄醬
1湯匙魚露
1茶匙糖
250毫升水
少許生油
芡汁:
1茶匙生粉
1湯匙水

醃料:
1茶匙檸檬汁
半茶匙鹽

炸粉:
150克麵粉
1隻雞蛋
100毫升水

 
做法:
 
1. 先把魚片塗上醃料待20分鐘, 再將每塊魚片沾上炸粉, 炸至金黃色,隔油待用;
2. 爆香生薑, 洋蔥, 乾辣椒, 加入炸魚及辣鴛鴦蒜蓉辣椒醬, 糖, 胡椒粉, 蠔油, 蕃茄醬, 魚露, 水;
3. 拌入芡汁, 起鍋即成。
